Another day in confinement! We are going on week 3 here in France. Is it really April 1? It’s all very surreal. There is no right way to deal with what is going on right now. Everyone is just making due. Some feel like being productive while others fell like just being. I truly hope these recipes can help you pass your time (if you have some extra) and fill your stomachs a bit. It’s good therapy for me too-a bit of socialization for someone who loves to cook for others and really misses it. This has certainly shown us all what things we truly miss and can’t live without and forces us to find ways to stay connected. This is my way to share. With all that is going on in the world right now I was trying to think of what I could do to help people feel better. I’ve been inspired by people recently sharing things that they can teach so others can learn and thought-well, what could I do? Well, I cook a lot!! And when times are rough-let’s eat cake! We eat cake or some kind of dessert every day and I highly recommend you doing the same! Instead of just posting a photo of my recent eats-why not share the recipe behind it!? So that’s the inspiration for this and future recipes to come! I tried to make a video but I’m not so good with the technology! But I’ll try again! I made this brown butter carrot cake the other day because I was craving something comforting and I usually try more fancy pant recipes but decided to go old school. Well, the result was nothing short of spectacular! This is the best carrot cake you will eat! It’s adapted from Stella Parks. I decreased the sugar a lot because I’m more sensitive these days.
